Creamy Christmas Dinner Casserole

Ingredients
  

  • Base
  • 2 cups cooked chicken or turkey shredded
  • 2 cups cooked pasta or diced potatoes
  • 1 cup frozen peas
  • 1 cup diced carrots
  • Filling
  • 1 ½ cups heavy cream
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt
  • Topping
  • 1 cup breadcrumbs
  • 2 tbsp melted butter
  • ¼ cup parmesan cheese
  • 1 tbsp parsley

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Mix chicken, pasta/potatoes, peas, and carrots in a large bowl.
  3. Whisk cream, milk, cream cheese, cheddar, and seasonings.
  4. Combine sauce with base ingredients and transfer to baking dish.
  5. Mix breadcrumbs, butter, and parmesan and sprinkle on top.
  6. Bake 25–30 minutes until golden and bubbling.
  7. Cool 10 minutes before serving.

Notes

  • Store leftovers in the fridge up to 4 days.
  • Freeze tightly covered for 2 months.
  • Substitute turkey for chicken if desired.
  • Let casserole cool slightly before slicing.
