Ingredients
  

  • Base
  • 2 tbsp butter
  • 1 medium onion chopped
  • 3 garlic cloves
  • Filling
  • 2 cups cooked chicken
  • 2 cups gnocchi
  • 1 cup carrots
  • 1 cup spinach
  • 4 cups chicken broth
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp thyme
  • Topping
  • 1 cup heavy cream
  • ½ cup parmesan cheese
  • 2 tbsp parsley

Method
 

  1. Melt butter and sauté onion until soft. Add garlic.
  2. Pour in broth and add carrots. Simmer until slightly tender.
  3. Add chicken and gnocchi; cook until gnocchi float.
  4. Stir in cream and parmesan until smooth.
  5. Add spinach and parsley. Let rest before serving.

Notes

  • Add broth if soup becomes too thick.
  • Use fresh parmesan for best taste.
  • Avoid boiling after adding cream.
  • Can swap spinach with kale.
