Ingredients
  

  • Base
  • 3 cups cooked shredded chicken
  • 2 cups cooked pasta or rice
  • 1 tablespoon olive oil
  • Filling
  • 1 cup sour cream
  • 1 cup cream of chicken soup
  • ½ cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • Topping
  • 1 cup crushed crackers or breadcrumbs
  • 2 tablespoons melted butter
  • ½ cup shredded mozzarella cheese

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a bowl mix chicken, pasta or rice, sour cream, soup, broth, and seasonings.
  3. Spread mixture evenly in the baking dish.
  4. Top with cheddar cheese, cracker topping, butter, and mozzarella.
  5. Bake for 25–30 minutes until golden and bubbling.
  6. Cool for 10 minutes before serving.

Notes

  • Store leftovers in the refrigerator for up to 4 days.
  • Freeze the casserole for 2 months if wrapped tightly.
  • Use rotisserie chicken for quick preparation.
  • Add vegetables like broccoli or peas for extra nutrition.
