Ingredients
  

  • Base
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • Soup
  • 4 cups chicken broth
  • 2 medium russet potatoes diced
  • 1 cup carrots diced
  • 1 cup celery chopped
  • 1 teaspoon dried basil
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • Creamy Finish
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • ½ cup sour cream

Method
 

  1. Brown ground beef in olive oil until fully cooked.
  2. Add onion and garlic and cook until softened.
  3. Stir in broth, potatoes, carrots, celery, and seasonings. Simmer until vegetables are tender.
  4. In a small pan, cook butter and flour, then whisk in milk to create a creamy base.
  5. Stir the mixture into the soup and add cheese and sour cream. Mix until smooth and creamy.

Notes

  • Store leftovers in the fridge for up to 4 days.
  • Add bacon or pickles for extra cheeseburger flavor.
  • If soup thickens too much, add broth or milk when reheating.
  • Freshly shredded cheese melts best.
