Ingredients
  

  • Base
  • 12 oz penne pasta
  • 1 tbsp salt for boiling water
  • Filling
  • 2 chicken breasts sliced
  • tbsp Cajun seasoning
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • Creamy Sauce
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 small onion chopped
  • 1 red bell pepper sliced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¾ cup grated Parmesan cheese
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp chili flakes
  • ½ tsp salt
  • ½ tsp black pepper
  • Topping
  • 2 tbsp chopped parsley
  • Extra Parmesan cheese

Method
 

  1. Cook pasta in salted boiling water until al dente and drain.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. Cook chicken in olive oil until golden and fully cooked.
  4. In the same pan sauté garlic, onion, and bell peppers in butter.
  5. Add cream and chicken broth and simmer until slightly thick.
  6. Stir in Parmesan and spices.
  7. Add pasta and chicken, toss until coated, and serve warm.

Notes

  • Add a splash of pasta water if the sauce becomes too thick.
  • Store leftovers in the fridge for up to 4 days.
  • Swap chicken for shrimp for a seafood version.
  • Use freshly grated Parmesan for smoother sauce.
