Method
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Mix chicken, rice, peas, and carrots in a large bowl.
- Whisk broth, milk, cream, cheese, and seasonings.
- Combine sauce with rice mixture and pour into baking dish.
- Mix breadcrumbs, butter, and parmesan and sprinkle on top.
- Bake 35–40 minutes until rice is tender and top is golden.
- Rest 10 minutes before serving.
Notes
- Store leftovers in the fridge up to 4 days.
- Freeze for 2 months in airtight containers.
- Rotisserie chicken works great for this recipe.
- Let casserole rest before slicing.
