Creamy Budget Chicken and Rice Bake

Ingredients
  

  • Base
  • 2 cups cooked chicken shredded
  • 1 cup uncooked long-grain rice
  • 1 cup diced carrots
  • 1 cup frozen peas
  • Filling
  • 1 ½ cups chicken broth
  • 1 cup milk
  • ½ cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp salt
  • Topping
  • ¾ cup breadcrumbs
  • 2 tbsp melted butter
  • ¼ cup parmesan cheese

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Mix chicken, rice, peas, and carrots in a large bowl.
  3. Whisk broth, milk, cream, cheese, and seasonings.
  4. Combine sauce with rice mixture and pour into baking dish.
  5. Mix breadcrumbs, butter, and parmesan and sprinkle on top.
  6. Bake 35–40 minutes until rice is tender and top is golden.
  7. Rest 10 minutes before serving.

Notes

  • Store leftovers in the fridge up to 4 days.
  • Freeze for 2 months in airtight containers.
  • Rotisserie chicken works great for this recipe.
  • Let casserole rest before slicing.
