Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 2 medium carrots sliced
  • 2 celery stalks chopped
  • 6 cups chicken broth
  • Filling
  • 2 cups cooked shredded chicken
  • 2 cups egg noodles
  • 1 bay leaf
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • Topping
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon juice optional

Method
 

  1. Heat oil and sauté onion, carrots, and celery until soft.
  2. Add garlic and cook until fragrant.
  3. Pour in broth and add bay leaf, then simmer gently.
  4. Stir in shredded chicken and cook until heated through.
  5. Add noodles and cook until tender, then season and rest before serving.
