Ingredients
  

  • For the Veggies:
  • Zucchini – 2 medium sliced
  • Bell peppers – 3 cut into strips
  • Carrots – 2 large thinly sliced
  • Mushrooms – 8 oz halved
  • Red onion – 1 large wedged
  • For the Marinade:
  • Olive oil – 3 tbsp
  • Garlic – 3 cloves minced
  • Lemon juice – 2 tbsp
  • Fresh thyme – 1 tsp chopped
  • Salt – 1 tsp
  • Black pepper – ½ tsp

Method
 

  1. Wash and slice all vegetables.
  2. Mix olive oil, garlic, lemon juice, thyme, salt, and pepper. Toss vegetables to coat.
  3. Preheat grill to medium-high.
  4. Grill vegetables 3–5 minutes per side until tender and lightly charred.
  5. Let rest 2–3 minutes before serving.

Notes

  • Can pre-marinate 2–4 hours ahead.
  • Freeze cooked veggies up to 1 month.
  • Adjust grill time for thicker vegetables.
  • Add your favorite herbs or spices for a twist.
