Ingredients

  • Chicken breasts – 4
  • Salmon fillets – 4
  • Olive oil – 2 tbsp
  • Lemon juice – 1 tbsp
  • Garlic – 3 cloves minced
  • Smoked paprika – 1 tsp
  • Salt – ½ tsp
  • Black pepper – ½ tsp
  • For the Veggie Side
  • Zucchini – 2 sliced
  • Bell peppers – 2 sliced
  • Red onion – 1 thickly sliced
  • Olive oil – 1 tbsp
  • Dried oregano – ½ tsp
  • Salt & pepper – to taste
  • For the Sauce / Glaze
  • Honey – 2 tbsp
  • Dijon mustard – 1 tbsp
  • Soy sauce – 1 tsp
  • Fresh herbs – 1 tsp chopped

Method
 

  1. Mix marinade ingredients and coat proteins; rest 15–20 minutes.
  2. Preheat grill to medium-high heat.
  3. Grill proteins until cooked and golden, 4–7 minutes per side.
  4. Grill vegetables until charred and tender, 3–4 minutes per side.
  5. Brush glaze over proteins; serve immediately.

  • Marinate up to 12 hours for enhanced flavor.
