Ingredients
  

  • Base
  • 1 tbsp olive oil 2 tbsp / 3 tbsp
  • 1 medium onion diced (2 / 3)
  • 3 cloves garlic minced (6 cloves / 9 cloves)
  • Filling
  • 1 lb ground beef or turkey 2 lb / 3 lb
  • 1 packet taco seasoning about 2–3 tbsp (2 packets / 3 packets)
  • 1 can 14.5 oz diced tomatoes (2 cans / 3 cans)
  • 1 can 8 oz tomato sauce (2 cans / 3 cans)
  • 1 can 15 oz black beans, drained (2 cans / 3 cans)
  • 1 cup corn 2 cups / 3 cups
  • 1 can 4 oz green chilies (2 cans / 3 cans)
  • 3 cups beef or chicken broth 6 cups / 9 cups
  • Topping
  • 1 cup shredded cheese 2 cups / 3 cups
  • ½ cup sour cream 1 cup / 1½ cups
  • 1 cup crushed tortilla chips 2 cups / 3 cups
  • 2 tbsp fresh cilantro chopped (4 tbsp / 6 tbsp)

Method
 

  1. Heat oil in a large pot and sauté onion until soft.
  2. Add garlic and cook until fragrant.
  3. Brown the ground meat until fully cooked and crumbly.
  4. Stir in seasoning, tomatoes, beans, corn, chilies, and broth.
  5. Simmer until slightly thick, bubbly, and aromatic.
  6. Let rest briefly, then serve warm with toppings.

Notes

  • Store leftovers in the fridge for up to 4 days
  • Add broth when reheating if it thickens
  • Swap meat with chicken or extra beans if preferred
  • For extra creaminess, stir in 2 oz cream cheese before serving
