Ingredients
  

  • Base
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks chopped
  • Filling
  • 2 potatoes cubed
  • 2 cups mixed vegetables
  • 1 cup cooked chicken or beans
  • 4 cups broth vegetable or chicken
  • Creamy Finish
  • 1 cup cream or milk
  • 1 tbsp butter
  • Salt and pepper to taste
  • Fresh herbs optional

Method
 

  1. Heat olive oil and sauté onion, garlic, carrots, and celery until soft and fragrant.
  2. Add potatoes, mixed vegetables, and broth. Simmer until potatoes are tender.
  3. Blend part of the soup for a creamy texture if desired.
  4. Stir in cream, butter, salt, and pepper, then simmer gently.
  5. Let the soup rest for 5–10 minutes before serving warm.

Notes

  • Store in the fridge for up to 4 days
  • Freeze in portions for easy future meals
  • Use milk for a lighter version
  • Add cheese or herbs for extra flavor
