Ingredients
  

  • Potato Base
  • 2 pounds potatoes
  • ½ teaspoon salt
  • Dressing
  • 4 slices bacon
  • 1 onion
  • 3 tablespoons vinegar
  • 1 tablespoon mustard
  • 1 teaspoon sugar
  • Topping
  • 2 tablespoons parsley

Method
 

  1. Boil potatoes until tender.
  2. Cook bacon until crispy.
  3. Sauté onion in bacon fat.
  4. Mix dressing ingredients.
  5. Toss potatoes with dressing and top with bacon and parsley.

• Use waxy potatoes for best texture.
• Serve warm for best flavor.
