Ingredients
  

  • Base
  • 2 chicken breasts halved
  • 1 cup flour
  • 2 eggs
  • 1 tbsp milk
  • 1 cup Italian breadcrumbs
  • ½ cup parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp paprika
  • 3 tbsp olive oil
  • Filling / Sauce
  • cups marinara sauce
  • 1 tsp oregano
  • ½ tsp garlic powder
  • Topping
  • cups mozzarella cheese
  • ¼ cup parmesan cheese
  • 1 tbsp fresh basil

Method
 

  1. Slice chicken breasts into thinner cutlets.
  2. Coat chicken in flour, egg mixture, and seasoned breadcrumbs.
  3. Fry in olive oil until golden brown on both sides.
  4. Place chicken in baking dish and top with marinara sauce.
  5. Sprinkle mozzarella and parmesan cheese.
  6. Bake until cheese melts and bubbles.

Notes

  • Store leftovers in the fridge for up to 3 days.
  • Reheat in oven to maintain crisp texture.
  • Swap mozzarella with provolone if desired.
  • Use homemade marinara for deeper flavor.
