Ingredients
  

  • Chicken Base
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 garlic cloves minced
  • 4 cups cooked shredded chicken
  • 6 cups chicken broth
  • 1 cup milk
  • ½ cup heavy cream
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp thyme
  • 1 tsp parsley
  • Dumplings
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 tbsp melted butter
  • ¾ cup milk
  • 1 tbsp chopped parsley optional

Method
 

  1. Heat butter and olive oil in a large pot. Cook onion, carrots, and celery until softened.
  2. Add garlic and cook briefly, then pour in chicken broth and shredded chicken.
  3. Stir in milk, cream, and seasonings. Bring to a gentle simmer.
  4. Mix dumpling ingredients until a soft dough forms.
  5. Drop spoonfuls of dough into the simmering broth.
  6. Cover and cook for 12–15 minutes until dumplings are fluffy and cooked through.

  • Store leftovers in the refrigerator for up to 3 days.
  • The chicken base freezes well without dumplings.
  • Avoid overmixing dumpling dough for the best texture.
