Ingredients
  

  • Base
  • 2 tbsp olive oil
  • 1 medium onion
  • 3 garlic cloves
  • 2 celery stalks
  • 2 carrots
  • Broth
  • 6 cups chicken broth
  • 2 cups water
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 bay leaf
  • 1 tsp salt
  • ½ tsp black pepper
  • Filling
  • 2 cups shredded chicken
  • 1 cup egg noodles
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley

Method
 

  1. Heat oil and sauté onion, garlic, celery, and carrots.
  2. Add broth, water, and seasonings. Bring to gentle boil.
  3. Simmer 15–20 minutes until vegetables soften.
  4. Stir in chicken and noodles. Cook until tender.
  5. Add lemon juice and parsley. Rest 5 minutes before serving.

Notes

  • Freeze without noodles for best texture.
  • Add cream for richness if desired.
  • Store in fridge up to 4 days.
  • Adjust salt after reheating if needed.
